I didn't want the bananas to go to waste, and while thawing them out and making banana bread is a good idea, I wanted something different. I had remembered seeing an idea for making banana ice cream in the blender so, I decided to try my own version of that. The results were very yummy. Here's what I did...
Put 3 frozen, peeled bananas in a blender. If they are sliced, even better.
Add a splash of coconut milk (approx. 1/8 of a cup or more, depending)
blend away.
This works best if you have a fairly powerful blender. My blender has a "snow" setting so, it crushes ice and frozen fruit very well. You may have to stop your blender and stir a little bit in between. Add more coconut milk until the consistency is to your liking. It should be almost like a soft-serve ice cream consistency.
There you have it. Quick, easy, sugar free, dairy free, gluten-free...and yummy!!
