Shepherd's Pie.

As promised...here is your recipe choice. Well, it was kind of a tie between this and Ratatouille pizza because Tara said she would like either. :)
This is a basic and simple version of Shepherd's pie. I've seen all different kinds with tons of ingredients and long preparation and then, there's this one that has few ingredients and not very long prep time. I haven't had anyone not like this. Especially guys...it seems to be a very hearty "man" meal. My kids love it too. I'm going to give you the recipe as is and in parenthesis give you my substitutions. You can make it either way.

Shepherd's Pie
1 1/4 lb. potatoes, peeled and cut into chunks
3 lg. garlic cloves, peeled
1 C. light or Fat Free Sour Cream (or lowfat plain yogurt)
1/2 C. Shredded cheddar cheese, divided
1 lb. lean ground beef (I use ground turkey)
2 Tbsp. flour
4 C. frozen mixed veggies (you can also use fresh but, frozen is quicker)
3/4 c. beef broth (i usually find a canned broth without msg or other additives)
1 Tbsp. Ketchup (2 Tbsp. adds a little more flavor)
Cover potatoes and garlic with water in a large saucepan. Bring to a boil. Reduce your heat to low and simmer 20 minutes or until potatoes are very tender. Drain and return to pan. Add sour cream or yogurt and 3 Tbsp. butter to potatoes and salt and pepper to taste. Mash to desired consistency. Stir in 1/4 C. cheese
Preheat oven to 375 degrees. Brown meat in a large nonstick skillet. Stir in flour. Cook 1 minute. Add vegetables, broth and ketchup; continue cooking 5 minutes.
Taste it to see if the seasonings meet your liking and adjust accordingly. *sometimes I might add a splash of worcestershire sauce (1 Tbsp.) for a nice flavor kick but, you don't have to.
Spoon your meat mixture into a casserole dish (spray it first). Cover with potatoes; top with remaining 1/4 c. cheese. Bake 20 minutes or until heated through and cheese is melted.
This serves 6.
I doubled this to serve 4 adults and 4 small kids and there was none left when we were through! :)

Sounds great - Shepherd's Pie was a staple at my house growning up (my dad loves it), but I haven't really made it since I got married. I'll have to try this recipe out on Jordan soon.

Made it last night and it was fast and very yummy! Thanks. Samuel didn't eat it (as usual) but both Tim and I had are fill. Great food for being pregnant. It's got protein, calcium, and veggies! It's officially in my recipe book.
