What Can I Eat That's Gluten-Free?

So, when I found the Gluten-Free Homemaker and saw that she did this carnival every Wednesday, I just had to be a part. Since I've only been gluten-free since around Christmas I'm still discovering what I can and can't eat and what is good and what is not so, I've decided to post a "day in the life" of what I ate yesterday. Here goes....

Breakfast: Bob's Red Mill Very Tasty Hot Cereal with honey, raisins, almonds and a splash of milk. Very Tasty...and filling!

Snack: Fruit is the best snack...and of course, Gluten-Free.

Lunch: Rice Cakes spread with homemade hummus and topped with cucumber and tomato slices, salt, and freshly ground black pepper.
I've always loved rice cakes but, some people don't. My husband even loves them when made this way. Lundberg Farms makes a variety of different flavors, sweet and savory and all Gluten-Free. The Tamari ones are delicious! These can be a little on the expensive side for rice cakes unless they are on sale. I usually buy the Trader Joe's Brand which are only $1.50.
I also had some fruit and raw veggies which I also dip in hummus.

Dinner: Sugar-Snap Pea stir-fry with baby portabella mushrooms, onions, and carrots over Brown Rice. I used Bragg's Liquid Aminos to make the stir-fry sauce. It is lighter than soy sauce and has not nearly as much sodium.

Another one of my faves: Lara Bars!!! I could go on and on about the wonderful qualities of the Lara Bar. Chocolat Mole' is one of my faves...like a spicy Mexican Hot Chocolate. yum.


A few variations to this recipe...I used a bag of Bird's Eye sugar snap stir-fry plus a few xtra frozen snap peas, and I added some baby bella mushrooms. I also used 2 Tbsp. lime juice instead of the vinegar and obviously you could use Gluten-Free soy sauce or the Bragg's, it's your choice! I also didn't use chicken this time. It's great with or without.

I'm glad you're finding good things you can eat! What a challenging lifestyle change!

The boys and I love hummus...we have it for lunch several times a month. We just dip carrot sticks and cucumber slices in ours. I make enough to use a whole 1 lb. bag of dried chick peas (cooked up, of course) then freeze it in portions large enough for one lunch. It freezes really well!

Love hummus. Never thought to put it on rice cakes though :)

My first thought was, "Oh, the poor girl is eating rice cakes." So I was glad to know that you enjoy them. Sounds like a good day of eating. I recently tried Lara Bars and really like them too. Thanks for participating in "What can I eat that's gluten free?"
