White Bean Chili

Steaming hot White Bean Chili

Ok. I know it's semi-nice out today but, I made this when it was cold out. Plus, if you live near me we could have a foot of snow on Easter...who knows?
The name of this recipe is a little deceiving. Although it is made with white beans, it is not necessarily a "white" chili. It does have tomatoes, and a wonderful and different flavor. I am not a chili person and my husband is, so when I found this recipe, I decided to try it. I love it much better than traditional chili. Don't let the cinnamon and allspice in this turn you off from trying it. As it cooks in the slow cooker, the flavors blend wonderfully and it turns out great! My kids even loved it.



White Bean Chili


1 pound ground chicken *

3 C. coarsely chopped celery

1 can diced tomatoes, undrained

1 can Great Northern (cannelini) beans, drained and rinsed

1 1/2 C. coarsely chopped onions

1 C. chicken broth

3 cloves garlic, minced

4 tsp. chili powder

1 1/2 tsp. ground cumin

3/4 tsp. ground allspice

3/4 tsp. ground cinnamon

1/2 tsp. black pepper


cook ground chicken in skillet until browned.

Combine chicken along with the rest of the ingredients in your crockpot or slow cooker. Cover and cook 5 1/2 to 6 hours on low or until chicken is cooked through and celery is tender.

At first I thought it needed more liquid but, as it cooks, it creates its own liquid and ends up being a nice, thick chili!

Served with cornbread, this makes a complete meal.


*You could use ground turkey if you like but, I like the flavor of the ground chicken in this best!
