Banana Pancakes!

Yesterday was my son's 4th Birthday! I can't believe I am mommy to a 4 year old. We've established the "birthday dinner" tradition in our house that actually started when I was little. For the longest time I remember asking my mom to make me pork and sauerkraut for my birthday...and I'm not even Irish! Well, this year for K was fun because he is now able to start making his own choices. I asked him what he would like for his birthday dinner and he said, after a little thought, Banana pancakes and strawberry cake! I was happy to oblige! :) So, in honor of K's birthday, I will post the recipe for banana pancakes. They are very yummy!
I keep a box filled with leftover birthday plates and accessories from past celebrations and I bring them out for birthday dinner! It makes it really special and fun!
Here's my two favorite guys blowing their party blowers! Tomorrow we will have a family party for K! He is so excited! I'll post some pictures next week!


OK. So here's the recipe.
BANANA PANCAKES
1 c. flour (wheat or white, your choice)
1 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 c. milk
2 Tbsp. oil (or applesauce)
2 ripe bananas, mashed
1. Combine flour, sugar, baking powder and salt. In a separate bowl, mix together egg, milk, oil or applesauce, and bananas
2. Stir flour mixture into banana mixture; batter will be a little lumpy.
3. Heat an oiled skillet or griddle over medium heat. Pour batter onto pan (I use a small ladle which is about 1/4 c.) Cook until cakes are golden brown on both sides.
*You can also serve with sliced bananas on top or sliced strawberries!

Happy, happy birthday K!!! I hope 4 is the most wonderful year a boy could ask for!

I may just make those pancakes this weekend since I have lots of bananas. My kids will flip for them!

We tried your banana pancakes today - yum! I'm not usually a big fan of banana flavored things, so it took me a while to try these, but I'm glad we did - we all enjoyed them! Thanks :)
