Today is Friday, Yay!! I decided to post a recipe that would save you alot of time, especially since Thanksgiving is coming up. I know I'm always looking for something quick, healthy, and delicious to make and sometimes it's really difficult to find recipes like that. This one I found on 101cookbooks.com it is called 5 minute tomato sauce. It is delicious and very fresh tasting. I've actually thought of trading in my old sauce recipe for this one because it's alot faster and only uses a few ingredients. Here it is.
Five Minute Tomato Sauce
1/4 cup extra virgin olive oil
1 1/2 tsp. crushed red pepper flakes (I used less)
1/2 tsp. salt
3 medium cloves garlic, finely chopped
1 28-ounce can crushed red tomatoes (a "middle of the road" brand)
zest of one lemon (I used a little less)
Combine the oil, red pepper flakes, salt and garlic in a cold saucepan. Stir while you heat the saucepan over medium-high heat, saute just 45 seconds or so until everything is fragrant- you don't want the garlic to brown. Stir in the tomatoes and heat to a gently simmer, this just takes a couple of minutes. Remove from heat and taste. If the sauce needs more salt, add it now. I also added a pinch of sugar to cut some of the tang. Stir in the lemon zest and serve on top of your favorite pasta. I used whole wheat spaghetti.

This one sounds so do-able and delicious too. I have never thought to put in lemon zest before. Interesting!
I bet if you had any sauce leftover it would be even better the next day. Yum!
