The summer squash was on sale at my grocery store this week for $.89 and I couldn't pass it up. Here's what I do with mine...
What you'll need...
2 lbs. zucchini (cut lengthwise, then crosswise in approx. 1.5 inch chunks, like half moons)
1 Tbsp. Olive oil
Parmesan Cheese
Salt and pepper to taste
What to do...
Preheat your oven to 400 degrees F. Spread zucchini pieces on a large baking sheet.
Pour olive oil over zucchini and mix well on the sheet. (I use my hands).
Stick in the oven for 15-20 minutes or until nice and brown.
Make sure there is space between your zucchini pieces. If they are crowded, they'll steam instead of roast.
When they are out of the oven, sprinkle with some freshly grated parmesan cheese.
Add salt and pepper to taste.
I find that you don't really need a lot of seasoning. The roasted brings out the amazing flavor of the zucchini and I usually don't even add salt or pepper but, it's whatever you like!
That's it. Quick, easy, and delicious!
