Buckeyes
1/2 lb. (2 sticks) butter, softened
2 C. creamy peanut butter
1 tsp. vanilla
1 1/2 lbs. powdered sugar
1 pkg. chocolate chips or melting wafers* (12oz.)
Mix softened butter, peanut butter, and vanilla in bowl.
Stir in powdered sugar until smooth and doughlike.
Roll into 1 inch balls and place on wax paper lined cookie sheet.
Refrigerate until solid.
Melt chocolate chips or melting wafers*
(if using chocolate chips add 1 Tbsp. shortening)
Dip balls 3/4 of the way into the chocolate.
Put on wax paper to harden.
Makes about 120. *Melting wafers are little round disks used to make chocolates and are available in most larger grocery stores.
I hope you enjoy these. Obviously they are not for those watching their calorie intake but hey, it's the Holiday, right?

These were my favorites growing up. We called them buckeyes too - whenever I call them that to anyone out here, they look at me really funny and have no idea what I'm talking about :) I didn't have a recipe, but now I will definitely make some this year.(I am another peanut butter/chocolate fan. That whole salty/sweet combo is my favorite)

I think my mom just made a variation of these for Daniel's birthday - he WILL be sharing those with me! I can hardly wait! Moderation is the key... except I'm not all that good at it ;)
